I love Mother’s Day brunch as much as the next mom, but when you suffer from pain like I do, I am choosier on what I eat. I notice that when I eat too much flour or sugar that I get more pain in my hands and elbow for example. Oatmeal Pancakes


My favorite types of pancakes are those made with oatmeal flour. This is a simple substitution that switches out regular flour with oatmeal. Simply take dry oatmeal and put it in the blender until it becomes a powder. You can load these delicious pancakes up with berries full of antioxidants and sprinkle some cinnamon that can also lower pain. Finally drizzle it with a bit of honey instead of syrup.

Overnight Oats


Overnight oats can be a delicious treat that tastes just like dessert. My favorite recipe has coconut milk, almond milk, chia seeds, vanilla, and almond butter and you can cut up some bananas. I like to also add some allspice for extra flavor and sweeten up with a little maple syrup.

Mangoes


May is mango season and if you have never tried mangoes, this is a great time of the year to get some at your local grocery store. I live in South Florida where mangoes are abundant and I simply pick some up from my brother’s tree in the backyard. You can get mangoes that are extra sweet and peel them almost like a banana or you can have them green and slice them. They are very tart and taste almost like a granny smith apple.
